Our story begins in a small town
A Culinary Institute of America (Hyde Park) graduate and Hunterdon County, NJ native, Matt McPherson has stayed true to his local roots integrating the freshest locally grown and harvested ingredients into his unique dishes.

As owner, manager and chef, Matt has also become a fixture in the Flemington community by supporting local organizations and charities.

Chef and owner, McPherson has stayed true to his local New Jersey roots integrating the freshest locally grown and harvested ingredients into his unique Flemington restaurant dishes. He pays homage to a wood fired grill that “brings out the best flavors” of his dry aged Steak, 3 day Baby Back Ribs, Cedar Plank Roasted Salmon, Griggstown Marinated Chicken, and famous wood fired Romaine Heart.

The restored Victorian home provides a comfortable and elegant atmosphere. Tables downstairs feed off the warmth and energy of the bustling open kitchen. For seats close to the action, request the chef’s table where you can watch Matt and his team from a perch overlooking the restaurant grill. Upstairs is away from the bustle of the grill, while the porch provides relaxed and refreshing outdoor dining.

BYOB Flemington Restaurant
Matt’s Red Rooster Grill is a BYOB restaurant. There are no corkage fees, just bring your favorite wine and have our well-trained staff open it for you. We also have decanters, if necessary, and fine wine glasses. If you aren't in the mood for wine, we also have other stemware if needed.
For added convenience, we are pleased to offer Unionville Vineyards wine, directly from the award-winning winery approximately 5 minutes away from our restaurant in Flemington, NJ.
